Whole Fresh Frozen Cornish Crawfish
A relative of the lobster, the crawfish is a beautiful spiny crustacean and even more of a delicacy than its family members. Unlike a lobster, they are an orange golden colour and are covered in spines. They also lack large claws, instead being equipped with spiky multi-purpose front legs and huge antennae. Crawfish are highly prized by the French and the Spanish but often get confused with American crayfish in the UK, which are much smaller and not as tasty. Crawfish is a very decadent meat and therefore is more expensive than lobster.
Our whole Cornish crawfish are mainly caught by the local netting fleet when they are working deep waters off the Isles of Scilly during the summer and autumn months. We only buy crawfish from the South Western Approaches.
Our crawfish are carefully frozen raw to lock in freshness, then dispatched in insulated packaging with ice packs. While we take every precaution to maintain temperature during transit, the product may arrive partially or fully defrosted.
On arrival, refrigerate at 0–5°C and consume within 24 hours, or refreeze if still well chilled. If fully defrosted, do not refreeze and cook promptly.
All crawfish must be thoroughly cooked before consumption.
Sold by approximate weight; some natural loss may occur during thawing and cooking.

800g – 1.0kg – One Person Main Serving
1.0kg – 1.2kg – Two Person Starter Serving
