Cornish Lobster Pizza
Chef, author and food photographer James Strawbridge has created this quick and easy recipe for Cornish Lobster Pizza.
Ingredients – Makes one big or two small pizzas
½ cooked lobster meat
50g sliced goat’s cheese
3 new potatoes, finely sliced
1 tsp capers
1 tsp finely chopped chives
Pinch of sea salt
Pizza dough
White sauce:
½ shallot, finely diced
40g butter
1 tbsp plain flour
100ml double cream
50ml milk
1 tbsp grated parmesan
For the lobster oil:
Leftover lobster shell, cracked
150ml olive oil
Pinch of saffron
4 garlic cloves
Method
Step 1
Preheat your pizza oven to 375˚C or domestic fan oven to 220˚C. Make your lobster oil first by cooking the shell in oil with garlic and saffron for 5-10 mins. Then allow to cool and blitz the shell to break it into smaller pieces in a food processor. Strain into a small jug to finish the pizza later.
Step 2
For the pizza sauce make a simple roux by melting butter and gently sautéing the shallot. Then add in flour, stirring until smooth. Slacken with cream and milk and stir in the parmesan until smooth and velvety. Season to taste and set to one side to cool.
Step 3
Roll out your pizza dough on a floured surface and top with a generous spoonful of white sauce. Then add very thinly sliced potato tossed in chive and capers, followed by your goat’s cheese and large pieces of cooked lobster.
Step 4
Bake your pizza for 3-4 mins, turning every 15-30 seconds for an even crust. Drizzle with lobster oil before serving.
